Avocado, Pomegranate, And Orange Salad

Ingredients:
For Salad
1 avocado, large diced
2/3 cup pomegranate arils
1/2 cup mandarin oranges
8 cups mix salad greens
1/4 cup feta cheese, crumbled
For Dressing
1/3 cup olive oil
1 tsp Dijon mustard
1 tsp honey
1 tsp apple cider vinegar
1 tsp lemon/lime zest
1 tbsp lemon/lime juice
1 tbsp fresh squeezed orange juice
salt and pepper to taste
On a large platter or in a large bowl, place salad greens and top with avocado, pomegranate arils, mandarin oranges and feta.
Whisk together ingredients for dressing.
Drizzle dressing over salad or serve on the side.
Serves 2 to 4
Notes&Tips:
This Avocado, Pomegranate and Orange Salad is delicious for lunch or as a side for dinner. It also lights up your mood with its vibrant colors.
Navel oranges, blood oranges or grapefruit can be substituted for mandarin oranges.
This salad is simple to put together. The most difficult part is getting the arils out of the pomegranate. I half fill a large bowl or my sink with cold water, cut the pomegranate in quarters, dunk it with my hands in the water and remove the arils. Removing the arils using water, prevents the juice from squirting all over the counter and the walls and on your clothes. The juice can stain your clothes but wipes off easily from the counter and walls.
I generally serve dressing on the side as not everyone in my household uses dressing. Also, if there is left over salad, you don't have to toss it as it isn't soaking up the dressing in the fridge and won't be wilted the next day.
