Baked Fillet of Salmon

Ingredients:
1 side Norwegian Salmon (about 2 1/2 pounds)
1 sprig rosemary, finely chopped
2 tbsp olive oil
2 tbsp lime or lemon juice
salt and pepper to taste
Oil a baking sheet or large platter that will hold the salmon. Wash salmon and pat dry, place on the baking sheet. Preheat oven to 400°F (375°F for convection oven).
In a small bowl, combine rosemary, olive oil, lime juice, salt and pepper. Season the salmon on both sides with the rosemary mixture.
Bake the salmon for 15 to 17 minutes, depending on thickness of salmon. Salmon should flake easily with a fork when done.
Yields: about 10 servings

Notes&Tips:
Salmon not only tastes good, but it contains significant amounts of essential omega-3 fatty acids, which support heart and eye health. In addition, it contains a boatload of additional nutrients: protein, Vitamin D, Vitamin B-12, Vitamin B 6 and Selenium.
There are many ways to cook this favorite fish but sometimes the simplest wins out. For this dish, I wanted it to be a no fuss, no frill dinner that allows the simple delicate and delicious taste to win.
I like to make light cuts into the whole fillet before baking as this makes it easier to cut individual portions after it done cooking.
I served this Baked Fillet of Salmon with sautéed Swiss Chard and a side of Smashed Broccoli.
Use left over Bake Fillet of Salmon as your protein source on salads, for a sandwich or wrap.
