Baked Rainbow Trout

Ingredients:
1 lb. Rainbow Trout Fillets
1 tbsp lemon juice
1 1/2 tbsp olive oil
salt and pepper to taste
2 small on-the-vine tomatoes, ripe but firm
a few thin slices of red onion, optional
2 pieces of foil to make a packet for the trout
Preheat oven to 375℉ (350℉ convection). Dice the tomatoes.
Drizzle the olive oil and lemon juice over the fillets. Season with salt and pepper.
Place the fillets on one piece of the foil and then put the seasoned fillet on. Add the diced tomatoes and slices of onion, if using. Cover with the second piece of foil and seal the sides.
Place foil packet on a baking pan or oven proof dish. Cook for 13 to 15 minutes, depending on the thickness of your fillets.
Gently open the packet to remove the top foil, be careful as steam will escape. Place on a serving dish. Serve the fish with a drizzle of the liquid from baking in the packet.
Serve with Asparagus Salad.

Yields: 4 servings
Notes&Tips:
Fish is one of my favorite ways to get my protein. And I like to keep the recipe simple; especially with a fish that has great taste. And Rainbow Trout, like Salmon and Tuna, is a great tasting fishing.
I served this delicious Baked Rainbow Trout with Asparagus Salad and slices of homemade Sourdough Rye with butter.
