Baked Walleye with Olives, Capers & Artichoke Hearts

Ingredients:

  • 3 to 4 walleye fillets (about 1.5 pounds)

  • 1 tbsp oil

  • 1 tbsp lemon juice

  • 1 tbsp capers, drained and gently smashed

  • 6 large green olives, sliced

  • 6 to 8 Kalamata olives, sliced

  • 1/3 cup quartered artichoke hearts

  • salt and pepper to taste

  1. Heat oven to 375℉ (convection 350℉).

  2. Drizzle lemon juice on walleye fillets. Season with salt and pepper.

  3. Place seasoned walleye in a greased baking dish and scatter the capers, sliced olives and artichoke hearts on top.

  4. Baked for 12 to 15 minutes, depending on the thickness of the fillets.

Yields: 3 to 4 servings
