Berry Cobbler

Ingredients:

  • 3 cups berries (mixed or just one type - your choice)*

  • 1/2 cup sugar, divided

  • 4 tbsp melted butter

  • 1/2 cup self-rising flour

  • 1/2 tsp salt

  • 1/3 cup milk

  • 1/4 cup water

  • 1 sprig finely chopped chocolate mint leaves, optional

  1. Preheat oven to 350°F (convection 325°F). If using strawberries, slice berries.

  2. In a medium-sized saucepan, combine berries, 1/4 cup sugar and water. Cook over medium-low heat until sugar dissolves and the berries release their juices. Remove from heat.

  3. Pour melted butter in a 2-quart baking dish.

  4. In a medium-sized bowl, combine flour, 1/4 cup sugar and salt. Stir in milk until well combined. Do not over mix. Pour over butter but do not stir.

  5. Spoon berries and juices over batter; do not stir.

  6. Bake 25 to 30 minutes until crust rises to the top and browns.

  7. Serve alone or with ice cream.

Yields: 8 servings


Notes&Tips:

  • Berry Cobbler can be baked in individual ramekins. Divide the butter into 8 6-ounce ramekins. Divide the batter and the berries among the ramekins and bake for 15 to 18 minutes.

  • This dessert comes together quickly with little effort! It is always one of the first ones I make when berries come into season. I have used just fresh strawberries for this recipes but in the past I've also used a mix of berries - blackberries/strawberries/blueberries. I actually prefer it with just strawberries. If you don't have fresh berries, by all means use frozen; but do not thaw. If using strawberries, slice them.
