Couscous Salad

Ingredients:
For the Couscous:
1 1/2 cups couscous
1 1/2 water or chicken broth
1 tbsp butter
1/2 tsp salt
3 to 4 sliced mini red sweet peppers
1/4 cup slice black olives
1/4 cup slice green olives
For the dressing:
2 tbsp olive oil
1 tbsp lemon juice
1 tsp apple cider vinegar
1 tsp lemon zest
salt and pepper to taste
In a medium saucepan, bring water or chicken broth, salt and butter to a boil. Remove from heat and add couscous, stir, cover and let sit for 10 minutes.
In a small bowl, whisk all ingredients for the dressing.
Fluff couscous with a fork after 10 minutes. Transfer to a serving bowl, add peppers and olives, drizzle dressing over couscous and gently stir to combine.
Serve warm as a side dish or salad.
Serves: 4 to 6
Notes&Tips:

Incorporate any other vegetable that you like. I wanted to keep this a simple salad so I only used peppers and olives. The Roasted Curry Chicken that I served this with had plenty of flavor. If serving this salad as a meal by itself, add some herbs if you like and even some sautéed onions and garlic.
This salad is pretty much a blank slate that you could paint it any way you want and it will still be delicious. Don't be afraid to show your creativity. The couscous is bland enough that anything would add flavor to it.
