Egg Salad Sandwich with Truffle Spread

Ingredients:
4 slices whole wheat bread
1 tbsp truffle spread
Butter lettuce leaves
2 hard boiled eggs
1 tbsp Hellman's mayonnaise
2 tsp Dijon mustard
2 tsp chopped chives
2 tsp capers
salt and pepper
In a medium sized bowl, peel hard boiled eggs and mash with a fork.
Stir in mayonnaise, mustard, chives and capers.
Season with salt and pepper.
Spread truffle spread on the slices of bread. Place two Butter lettuce leaves each on two slices of bread. Place half of the egg salad on each slice of bread with the lettuce and top with the remaining bread.
Cut each sandwich in two and serve.
