Fish & Vegetable Wrap

Ingredients:

1 sun-dried tomato wrap
4 ounces cooked white fish
6 medley tomatoes, halved
chopped cucumber
chopped bell pepper
a handful of baby spinach
Fresh squeezed lemon juice - to taste
Heat wrap for about 20 seconds in microwave. Place spinach, tomatoes, cucumber, and peppers in center of wrap. Break fish into chunks and add to vegetables. Sprinkle lemon juice on fish. Fold one part of wrap a third of the way, fold over the two sides. Place a toothpick to hold together. Serve.

Serves 1.
Notes & Tips:
I love having this simple and healthy wrap for lunch. It also works for a light dinner.
Substitute any vegetable or meat you like. I've used cabbage and carrots with left over chicken with some ranch dressing. Also, chopped avocado with grilled chicken is absolutely divine.
