Garlic & Lemon Asparagus

Garlic & Lemon Asparagus

Ingredients:

  • 1 lb asparagus

  • 3 cloves garlic, minced

  • 1 tbsp lemon juice

  • 1 tbsp oil

  • zest of 1 lemon

  • salt & pepper to taste

  • water for cooking

  1. Bring 4-6 cups of water to boil a medium-sized pot.

  2. Wash and trim asparagus. Slice diagonally into 1 1/2 inch pieces.

  3. Place asparagus into boiling water and cook for 2 minutes. Drain.

  4. Heat oil in a pan and cook garlic for 1 minute.

  5. Add asparagus, lemon juice, salt and pepper, and 1/2 of the lemon zest to the pan. Stir to combine.

  6. Place in a serving bowl or platter and garnish with the remaining lemon zest.

  7. Serve with your favorite grilled or baked meat.

Serves: 4.


Notes&Tips:

  • My family love fresh asparagus, and so a few years ago we planted some in our garden. I am looking forward to harvesting this year as it will be the third season since we've planted. Asparagus takes 3 to 4 years to mature.

  • Asparagus can be grilled, roasted, sauteed, steamed, or eaten raw. A versatile vegetable that does not require you to slave over the sink or stove.

  • Every time I cook asparagus I like to do a different recipe. I keep it simple as when spring comes around I like to enjoy the warmer weather outdoors.

  • If your asparagus are on the skinny side, cook for less time. Or if you happen to get the really fat asparagus, cook for a bit longer. Mine were somewhere in between.
