Garlic-Sage Mashed Potatoes

Ingredients:
1 1/2 lb Yukon gold potatoes (about 4 large potatoes)
2 to 3 sprigs fresh sage, finely chopped
5 garlic cloves, peeled
3 tbsp butter
1 cup milk, warmed
salt and pepper to taste
Scrub potatoes if using with the skin, otherwise, peel potatoes and cut into quarters.
Place potatoes and garlic in a large pot and cover with water. Bring to a boil. Reduce heat to medium-low and cook potatoes until fork tender, about 10 to 12 minutes.
Drain potatoes and return to pot.
Heat the butter in a small saucepan, when butter has melted, add sage and cook for 1 minute. Pour over potatoes, along with 3/4 cup of the warmed milk. Mash to your desired consistency. Add the remainder of the milk as necessary.
Season with salt and pepper to taste.
Serves: 4
Notes&Tips:
This time of the year, my garden is brimming with herbs, so I try to incorporate all kinds of herbs into my everyday cooking.
Sage works well with mashed potatoes but do not use too much as it could impart a bitter flavors.
This Garlic-Sage Mashed Potatoes goes well with any type of grilled meat.
I love using Yukon Gold potatoes and I generally leave the skin on. It makes a wonderful mashed potatoes.
