Sage-Lemon-Ginger Chicken

Ingredients:
1 1/2 to 2 lbs chicken breast
1/4 cup Hellman's mayonnaise (or your favorite)
3 sprigs fresh sage, minced
2 cloves garlic, minced
2 tbsp grated ginger
1 tbsp grated lemon zest
2 tbsp lemon juice
1 tbsp olive oil
1/4 tsp black pepper
1/2 to 1 tsp salt
lemon wedges for serving, optional
Wash and pat chicken dry with paper towels. Season with salt and pepper.
In a large bowl, combine 1/4 tsp salt, mayonnaise, sage, garlic, ginger, lemon zest, lemon juice and olive oil. Toss the chicken in the mayonnaise mix until well coated. Refrigerate for at least 2 hours, but 6 to 8 hours is ideal, as it allows the marinade to soak into the chicken. Turn chicken a few times while it is marinating.
Remove chicken from refrigerator 30 minutes before grilling. Heat grill on medium-high. Grill chicken for 4 to 6 minutes per side, depending on thickness of breasts.
Serve with a rice pilaf or your favorite steamed vegetable/s and lemon wedges, if using.

Sage-Lemon-Ginger Chicken is an easy recipe that is perfect for cooking in the summer. You do not have to spend a lot of time fussing and therefore have the evening to relax in the backyard or go for a walk or sit and enjoy that thriller you've been wanting to read for weeks.
This chicken recipe goes will with a simple rice pilaf or steamed green beans.
Sage-Lemon-Ginger Chicken can be cooked on the stove top or even the oven.
Initially, I was tempted to pound the chicken breasts for even thickness, but given that I chose to marinate it in mayonnaise and that the breasts used were not very big, I opted not to. It came out perfectly cooked; juicy and tender! I would suggest if you have large chicken breasts, to pound them into an even thickness. This will ensure even cooking.
