Grilled Bison Burger with Caramelized Onion

For Burger

  • 1 lb. ground bison

  • 1/4 cup plain bread crumbs

  • 1 egg, beaten

  • 2 tbsp minced herbs (thyme, basil, marjoram, oregano)

  • 1 tbsp minced onion

  • 1/4 tsp red pepper flakes

  • 1 tsp smoked paprika

  • salt and pepper to taste

  • 4 hamburger buns

For Caramelized Onion:

  • 1 lb. sweet onion, slice 1/4 inch thick

  • 1 tbsp olive oil

  • 1/4 tsp salt

Mayo Spread (Optional):

  • 2 tbsp Hellman's mayonnaise

  • 2 tsp Dijon mustard

  • 2 tsp lemon juice

  1. Heat grill high. Add all ingredients for burger in a large bowl, except buns. Using a fork, incorporate seasonings into meat. Do not overmix. Evenly divide meat into 4 and shape into patties.

  2. In a small bowl, combine all ingredients for Mayo Spread; cover and set aside.

  3. Heat a large skillet on medium high with the olive oil. Add onions and salt, stir to incorporate. Let onions cook for 5 minutes, stirring occasionally.

  4. Reduce heat to low and let onions cook for 10 to 15 minutes. Stirring occasionally. Towards the end, add a bit of water to help scrape up the bits of onions clinging to the pan.

  5. Spray or oil grill grates to prevent sticking. Place patties on grill and cook for 4 minutes; flip and cook for 3 minutes. Patties should register an internal temperature between 135 and 140 for medium.

  6. Spread buns with Mayo Spread, if using, place a patty on each bun, top with some caramelized onions and serve.

Yields: 4 servings


Notes&Tips:

  • Bison meat is leaner that ground beef, and for this reason, be careful when mixing in the seasonings as you do not want to over mix. Bison burger is best cooked medium or medium-rare.

  • You can serve this burger with lettuce and tomato if you wish, but I chose not to as I wanted to experience the taste of the caramelized onions solely with the burger. I also did not use any condiments like ketchup or mustard. Although, others chose to add the typical condiments to their burger.

  • If you love a good burger and you're looking to cut fat from your diet, then this is the burger for you.
