Grilled Cauliflower Salad

Ingredients:
1 small head cauliflower or 1/2 large cauliflower
1 cup cherry or grape tomatoes, halved
1 cup basil leaves
1 tbsp capers
2 to 3 tbsp olive oil*
1 tbsp apple cider vinegar
1 tbsp Dijon whole grain (Maille brand) mustard
1 tbsp fresh dill, chopped
1 garlic clove, crushed
salt and pepper to taste
In a small bowl, whisk together, olive oil, vinegar, mustard, and garlic. Add chopped dill and combine. Set aside.
Separate cauliflower into florets. Season with salt and pepper and a drizzle of olive oil.
Place a grill basket on grill and heat grill on medium high. Place seasoned cauliflower into grill basket and grill for 10 to 15 minutes. Stir occasionally to ensure even grilling.
When cauliflower is done grilling, place in a large bowl. Add tomatoes, capers and basil to cauliflower mixture and stir to combine.
Pour dressing over cauliflower mix and toss to combine.
Serve as is or chill for 1 to 2 hours before serving.

Notes&Tips:

This is a wonderful salad to enjoy during the summer as a side or even as a light lunch.
*For a thinner dressing using 3 tablespoons of olive oil.
I enjoy grilling most everything outside during the summer. So every chance I get I'd put something on the grill; and I've never been disappointed!
I have also been having a love affair with Dijon mustard and have been making a lot of different types of dressings and dips with it. I use the Maille brand of Dijon but any good quality Dijon will do.
This is a really simple salad to make. You can served it up with grilled seafood or chicken or if you're a steak lover then just grill your favorite steak.
