Grilled Lamb Chops with Mint Sauce

Ingredients:
2 lbs. lamb chops (about 8 to 10 chops)
2 tbsp finely chopped rosemary leaves
4 garlic cloves, minced
1 1/2 tbsp olive oil
salt and pepper to taste
For Sauce:
2 to 4 tbsp olive oil
1 tbsp lemon juice
1 cup fresh mint leaves
1 tbsp chopped chives
salt and pepper to taste
In a small bowl, combine chopped rosemary, minced garlic, and olive oil. Set aside.
Rinse lamb chops and trim any excess fat off. Pat dry. Place in a medium-sized bowl and season with salt and pepper. Add the rosemary mix to the lamb chops and mix to combine. Cover and refrigerate for about 2 hours.
To make the Mint Sauce, add mint leaves, chives, lemon juice and 2 tablespoon oil to a small food processor or blender, blend until herbs are finely chopped. Drizzle more olive oil as needed. Season with salt and pepper. Set aside.
When ready to grill lamb chops, remove from refrigerator 30 minutes before. Heat a gas grill on high, oil grill grates before placing lamb chops on. Lower heat to medium and grill for 3 to 4 minutes per side, depending on thickness.
Allow lamb chops to rest for 5 minutes before serving. Serve with Mint Sauce.

Notes&Tips:
This is an easy recipe that will give you time to relax on a summer weekend or evening. I cook these on the grill in the summer and in the winter on the stove in a grill pan. Be sure not to over cook the lamb chops or they will be tough. If your lamb chops are small, two minutes per side is enough.
These can be served up as an appetizer or add a salad and some cooked vegetables or rice pilaf and serve for dinner.
