Grilled Shrimp with Mango Salsa

Ingredients:
For the Grilled Shrimp:
1 lb. large shrimp
3 tbsp olive oil
1 tbsp lemon juice
1 tbsp finely chopped parsley/cilantro
1 garlic clove, grated or minced
1/4 tsp chili powder
1/8 tsp pepper flakes
salt to taste
For the Mango Salsa:
1 large mango
1 tbsp lemon juice
1 tbsp olive oil
1 tbsp chopped mint leaves
salt and red pepper flakes to taste
Peel and de-vein the shrimp, but leave the tail on.
In a small bowl, combine all the seasonings for the Grilled Shrimp. Pour 2/3 of the marinade over the shrimp and mix to coat. Reserve the remainder of the marinade for later use. Cover and place in the refrigerator for 2 hours to allow the marinade to soak in. Soak 4 to 5 bamboo skewers in water at least 30 minutes before needed.
While the shrimp is marinating, peel and dice the mango and place in a small to medium sized bowl. Add the lemon juice, oil, and mint leaves to the mango. Season with salt and pepper and stir to combine. Taste and adjust seasonings as necessary. Cover and refrigerate until ready to use.
Heat grill on high. Thread shrimp through skewers. Oil grill grates and reduce heat to medium. Place shrimp on grill and cook for 3 minutes; turn and cook for 2 minutes. Brush with the remainder of the marinade and serve with the Mango Salsa.

To make this into a meal, serve with a salad or some grilled vegetables. I served a Grilled Corn Salad with this Grilled Shrimp with Mango Salsa.
Depending on the size of your shrimp, you may need to cook a little less or a little longer. The shrimp I used in this recipe were large, which were about 30 shrimp in a pound.
If you are afraid of overcooking the shrimp, another option to grilling the shrimp is with the shell on. This ensures that your will not be stiff and inedible. If you go this route, only use half the marinade to marinate the shrimp and after cooking, remove the shells and brush the other half of the marinade onto the shrimp before serving.
