Grilled Za'atar Chicken Tenders With Peppers & Onions

Ingredients:
2 lb. chicken tenders
1 1/2 tbsp za'atar seasoning
5 garlic cloves, grated or minced
1/4 cup chopped fresh cilantro
1 tbsp chopped fresh marjoram
zest of 1 lime
2 to 3 tbsp lime juice
3 tbsp extra virgin olive oil
1 tsp salt
1/2 tsp black pepper
12 to 15 mini peppers, seeded and cut into half or quarters lengthwise
1/2 - 1 white onion sliced
oil for grill pan
4 to 6 pita bread for serving
Yogurt-Cilantro Dip
1/2 cup plain Greek yogurt
1 tbsp chopped cilantro (stem and leaves)
1 garlic clove, grated or minced
zest of 1 lime
1 tsp lime juice
salt and pepper to taste
Add all the ingredients for the Yogurt-Cilantro Dip in a small bowl and stir until incorporated. Cover and place in the refrigerator until ready to use.
Wash and trim tenders. Pat dry and place in a bowl, set aside.
In a small bowl, add za'atar, garlic, cilantro, marjoram, zest and juice of lime, oil, salt and pepper. Mix to combine.
Season the tenders with the marinade. Place in the refrigerator for 2 hours.
When ready to cook, place a grill pan on medium-high heat and add some oil. Once the pan is heated, add the peppers and cook, stirring for about 3 to 5 minutes. Remove cooked peppers from pan and keep warm. Add the onions in the pan and cook for 3 to 5 minutes. Place on the same platter as the peppers and keep warm.
If the pan needs more oil, add a little. Once the pan is hot, place as many chicken tenders that will fit without crowding the pan. The tenders need space and should not be touching. Cook the tenders for 3 to 4 minutes per side depending on thickness. For smaller tenders cook for 2 1/2 minutes per side. Transfer cooked tenders to a platter and keep warm as you cook the second batch.
Heat pita bread and serve with the tenders, vegetables and dip.
Yields: 4 to 6 servings

This is an easy and fun meal to put together. It is also very delicious. The crunchy vegetables and the flavorful chicken tenders go well together.
