Herb-Crusted Roast Beef Tenderloin

Ingredients:
1 3/4 to 2 pounds center cup beef tenderloin, trimmed
2 tbsp olive oil
1 tbsp chopped fresh rosemary
1 tbsp chopped fresh thyme
2 tsp each of fresh chopped oregano and parsley
3 garlic cloves, minced
1 tsp ground black pepper
2 to 3 tsp kosher salt
If tenderloin is refrigerated, let sit at room temperature for 1hour before cooking. Preheat the oven to 250°F.
Tie the beef with butcher's string and rub with the olive oil. Season with salt and pepper.
Combine the chopped herbs and garlic and pat the mixture on the beef.
Over high heat sear the beef in an ovenproof skillet, turning to brown on all sides, about 5 minutes.
Place the skillet directly into the oven and roast the beef for 20 to 25 minutes. An instant read thermometer should register 130°F (for medium rare). Loosely tent beef with foil and let rest for 10 to 15 minutes before removing the string and slicing.
Serve with your favorite roasted vegetables.

Herb-Crusted Beef Tenderloin is really a simple recipe. The meat itself is so tender and juicy that you don't need to add too many other ingredients to spoil that taste. After all, you want to know you are eating a tenderloin if you invested all that money in purchasing it!
The tenderloin used for this recipe was a small one, just about 2 pounds. If your tenderloin is bigger, you will have to increase the amount of the ingredients.
Serve this tenderloin on special occasions for just because you feel special on any given day. It will not disappoint.
