Herb-Crusted Walleye

Ingredients:
1 pound walleye fillets
1 cup plain bread crumbs
2 tbsp finely chopped herbs (marjoram, basil, rosemary, thyme)
2 garlic cloves, grated
1 to 2 tbsp grated or shredded Parmesan cheese, optional
1/2 tsp salt
1 egg, beaten
1 lime or lemon
2 tbsp butter
Heat oven to 425°F (convection 400°F). Place the butter in an oven proof 9 x 13 baking dish; place in the heated oven and allow butter to melt.
In a shallow dish, combine bread crumbs, chopped herbs, garlic, cheese (if using) and salt.
Wash and pat fillets dry; leave whole or cut to your desired size. Squeeze juice of half lime or lemon over fillets.
Remove baking dish from oven with melted butter.
Dip fish into beaten egg then dredge in bread crumbs mixture. Place fish in baking dish and bake for 20 minutes, or until fish flakes easily.
Squeeze a bit of lime or lemon juice over fillets and serve with your favorite side.
Yields: 4 servings
Notes&Tips:
Fish is one of my favorite protein to cook. It does not require long cooking time and the simplest recipe is always the best. Here, I have used a mix of herbs to flavor this fish recipe. Feel free to use just one type of herb if that's what you have. You can also substitute dried herbs for the fresh herbs in this recipe. About 1 1/2 to 2 teaspoons of dried herbs should be enough.
I served this Herb-Crusted Walleye on a bed of Sautéed Swiss Chard with a Garden Salad. Garlic Mashed Potatoes go well with this Herb-Crusted Walleye or try some Maple-Glazed Carrots.
This Herb-Crusted Walleye can also be used to make yourself a nice fish sandwich.
