Herbed Grilled Lamb Chops

Herbed Grilled Lamb Chops

Ingredients:

  • 6 lamb chops

  • 2 tsp olive oil

  • 2 tsp dried rosemary leaves

  • 2 tsp dried thyme leaves

  • 4 garlic cloves

  • 1/2 tsp sea salt

  • pinch of cayenne

  • Herb-infused olive oil for drizzling, optional

  1. Combine herbs, garlic , cayenne and salt in a mortar and pestle. Add olive oil and make into a paste.

  2. Rub paste onto both sides of chops. Cover and place in refrigerator for an hour or two.

  3. Fifteen minutes before cooking, remove chops from refrigerator.

  4. Heat grill or grill pan on medium heat.

  5. Cook chops 3 to 4 minutes per side depending on thickness and desired doneness.

  6. Drizzle with some herb-infused olive oil before serving.

Serves 3.


Notes&Tips:

  • Today was my daughter's birthday and for the past 4 years she has been ordering up lamb chops for her birthday dinner. She likes it simple, so I just let the meat do the "talking!"

  • In the winter months, I mostly used herbs that I have harvested and dried during the summer/fall. These dried herbs are much better than the dried herbs from the grocery store. However, feel free to use fresh herbs if you desire. Use 1 to 2 tablespoons fresh rosemary and 2 teaspoons fresh thyme.

  • I served these Lamb Chops with Peppers Stuffed with Herbed Yellow Rice and a deconstructed salad consisting of artisan lettuces, avocado and orange. I also made her a deviled chocolate cake.
