Minute-by-Minute Sirloin Steak

Ingredients:
1.5 lbs. sirloin steak
1/2 tsp sea salt
1 tbsp olive oil
1/2 tsp black pepper
2 garlic cloves, grated
1 inch piece of ginger, grated
1 1/2 tbsp butter, melted
salt to taste
Allow your steak to come to room temperature 1 hour before cooking.
Rub the steak all over with olive oil, sea salt and black pepper.
Heat a cast iron skillet until very hot.
While skillet is heating, combine melted butter, garlic and ginger.
Cook the steak for 5 to 6 minutes; turning every minute.
Every time you turn the steak, brush with the butter mix.
Place steak on a platter, season with salt and allow to rest for 10 minutes before cutting. If you have extra butter mix, drizzle on the steak while it is resting.
Slice steak thinly, drizzle with the resting juices and serve with Lemon Mashed Potatoes.
Serves: 4 to 6
Notes&Tips:
It is easy to achieve a perfectly cooked steak when we used expensive cuts like Filet Mignon, NY- Strip, T-Bone, Rib-Eye or Tenderloin. However, when we use the less expensive cuts of steak, cooking it to perfection, requires skill as well as patience.
Generally I only use Sirloin steaks for stir frying, but I decided to try this method that I saw Jamie Oliver used for feather (or flat iron) steak. It turned out beautiful at medium-rare.
I used a cast iron skillet to cook this steak, but a regular heavy bottom pan will serve the purpose as well.
You could certainly incorporate any other seasonings that you'd like: mustard, fresh or dry herbs and they will add to this very simple Minute-by-Minute Sirloin Steak.
