Mixed Berry Nut Salad with Raspberry Vinaigrette

Ingredients:
For the Salad:
6 to 8 cups spring mix (or your mix of salad greens)
1/2 cup raspberries
1/2 cup blueberries
1/4 cup toasted walnuts (or your choice of nuts)
For the Vinaigrette:
1 tbsp balsamic vinegar
1 tbsp raspberry juice
3 tbsp olive oil
1 tsp honey
salt and pepper to taste
Whisk together, vinegar, raspberry juice, olive oil, and honey. Add salt and pepper to taste.
Add spring mix to a large bowl or a big platter. Top with the berries and nuts.
Drizzle vinaigrette over salad and serve; or serve vinaigrette on the side.
Serves 4.

To make your own raspberry juice, use an equal part of berries to water ratio. Gently heat berry and water to a boil, reduce heat to simmer and cook for 10 minutes. Remove from heat and mash berries to a pulp with the back of a spoon. Strain to remove seeds. Store in the refrigerator and use as needed.
Fresh raspberry juice can be used in salad dressing, as a stand alone juice (with some added sugar), as the base of a rub for grilled meat or to make jams and jellies.
