Orange Avocado Salad

Ingredients:

  • 2 oranges

  • 1 avocado

  • orange juice

  • honey

  1. Peel oranges, slice into 1/4" slices, cut each slice into quarters. Place in a bowl.

  2. Cut avocado in two, remove seed. Slice each half of avocado into four slices. Remove skin and cut each slice into two. Place in bowl with oranges.

  3. In a small bowl whisk orange juice and honey. Pour over fruit and gently toss.

  4. Refrigerate for 30 minutes. Serve.

Serves 2.


Notes & Tips:

  • This is a simple salad that can be served for a light lunch or as a side with grilled chicken.

  • I especially enjoy this salad in the winter when oranges are plentiful.

  • Use different types of oranges (cara cara, blood orange, navel, etc.) for a bright burst of color on a cold winter's day - you won't want to defect to Florida or Arizona! as we in the Midwest sometimes want to do.
