Notes&Tips:
There's no excuse for not making this salad. Unless of course, you don't like nectarines? Or mango? By all means, substitute your favorite stone fruit for the nectarines - peaches, apricots, plums.
This salad can be served as a snack, an appetizer or dessert.
If your fruits are really sweet, you can reduce the amount of honey used.
The fresh mint leaves add a depth of flavor to this otherwise simple salad.
I kept the skin on the nectarines; but this salad can be made without the skin. The reddish color of the skin gave a nice contrast to the yellowish fruit.
