Peach & Mango Salad

Ingredients:

  • 4 ripe nectarines, chopped

  • 2 cups chopped ripe mango

  • 2 tbsp chopped fresh mint leaves

  • 2 tsp honey

  • 2 tbsp fresh squeezed orange juice or Mayer lemon juice

  • 1 tsp grated orange zest or Mayer lemon zest

  1. In a large bowl, whisk honey, orange juice and orange zest.

  2. Toss in chopped fruit and mint leaves.

  3. Chill for at least 1 hour. Serve.

Serves: 4


Notes&Tips:

  • There's no excuse for not making this salad. Unless of course, you don't like nectarines? Or mango? By all means, substitute your favorite stone fruit for the nectarines - peaches, apricots, plums.

  • This salad can be served as a snack, an appetizer or dessert.

  • If your fruits are really sweet, you can reduce the amount of honey used.

  • The fresh mint leaves add a depth of flavor to this otherwise simple salad.

  • I kept the skin on the nectarines; but this salad can be made without the skin. The reddish color of the skin gave a nice contrast to the yellowish fruit.
