Peach-Mint Smoothie with Coconut Milk

Ingredients:
1 cup coconut milk
5 peaches (about 2 1/2 to 3 cups), peeled and sliced
2 to 3 mint sprigs, leaves removed from stem + mint leaves for garnish
1 tbsp honey
1 1/2 to 2 cups ice
Place all ingredients in a blender and process until smooth.
Pour into 4 glasses and garnish with mint leaves.
Serve immediately.
Yields: 4 servings
Notes&Tips:
With the abundance of peaches on the market, I tend to go peach-crazy. Making a smoothie is a great way to use up some of that fresh fruit in a hurry.
Our garden has an abundance of mint: spearmint and chocolate mint. Besides making the obvious tea, I use mint in certain desserts and other beverages.
Peach-Mint Smoothie with Coconut Milk is a refreshing beverage to have during these hot summer days. In addition, it's quick, easy and delicious. And you can use a smoothie as a meal substitute - breakfast or lunch.
