Peach & Tomato Salad with Goat Cheese

Ingredients:
4 ounces crumbled goat cheese
1 tsp lemon zest
4 tbsp whole milk
1 tbsp Dijon whole grain mustard (Maille brand)
2 tbsp olive oil
1 tbsp vinegar
2 tsp lemon juice
1 tbsp chopped chives
10 basil leaves
10 mint leaves
3 ripe peaches cut into wedges
3 medium or 2 large Roma tomatoes, seeded and cut into wedges
salt and pepper to taste
In a large bowl, whisk together olive oil, vinegar, lemon juice and 1/2 tsp lemon zest chives, salt and pepper to taste. Set aside.
Place goat cheese in a food processor and process for about 2 minutes until creamy, scraping down sides as necessary. Add 1/2 tsp lemon zest and milk; process for 1 minute. Season with salt to taste.
Add peaches and tomatoes to bowl with dressing and toss thoroughly to combine. Fold in basil and mint leaves.
Spread whipped goat cheese on a large platter or shallow bowl and place peach and tomato salad on top of cheese. Serve immediately.

This is the perfect salad for a summer brunch, lunch or dinner. You'll have nothing to complain about once you've eaten this salad. Give a cursory glance at the ingredients and you might surmise that these ingredients just could not work well together. Well, my friend, you'd be wrong! This Peach and Tomato Salad with Goat Cheese will make a regular appearance on your dining table.
Use firm ripe peaces and tomatoes as they will hold up well when tossed with the dressing.
I served this salad with Herbed Salmon and Garlic Chives Potatoes.
