Peppers Stuffed with Herbed Yellow Rice

Ingredients:
1 cup Turkish rice - washed and drained 2-3 times
2 red/yellow/orange bell peppers
1/4 cup chopped parsley
2 tbsp chopped celery
2 garlic cloves minced
1 tbsp olive oil
1/2 tsp turmeric
salt and pepper to taste
2 cups water
Heat oil in pan on medium heat.
Saute celery for 3 minutes. Add rice, cook for 5 minutes, stirring frequently. Add garlic and cook one minute. Pour water into pan, stir, cover and bring to a boil.
Add parsley, turmeric, salt and pepper. Reduce heat and simmer for 15 minutes.
Remove from heat and let sit for 5 to 10 minutes. Fluff with a fork.
While rice is cooking, wash peppers and cut in half, lengthwise. Remove seeds without removing the stem.
Place peppers on a microwavable plate. Cook in microwave for 5 to 6 minutes.
Sprinkle salt and pepper on bell peppers. Fill cavities with rice. Press rice into pepper to make it compact.
Serves: 4
Notes&Tips:
In this recipe, I used Turkish rice as this was for my daughter's birthday dinner and she loves Turkish rice. Any rice will work, just adjust cooking time to the type of rice being used.
Serve with your favorite grilled meat or roast.
