Pineapple Crumble

Ingredients:
Crumble Topping:
1 cup rolled oats
1 1/2 cups all purpose flour
1/2 cup almond flour
1 1/2 stick unsalted butter
1/2 tsp cinnamon
1/4 tsp nutmeg
For the Filling:
2 can crushed pineapple, drained, juice reserved
1 1/3 cups sugar
1/2 tsp cinnamon
1/2 cup reserved pineapple juice
In a large heavy-bottomed pot, place all ingredients for the filling. Bring to a boil, reduce heat to simmer and cook for 45 to 50 minutes.
Combine oats, all purpose flour, almond flour, cinnamon and nutmeg in a large bowl.
Dice butter and cut into flour mixture until it looks like coarse crumb.
Line the bottom of a 11 X 7 baking dish (or 9 X 9) with half of the crumb mixture. Spread filling on top of crumb mixture. Cover filling with the remaining half of crumb mixture.
Bake in a preheated 425°F (400°F convection) oven for 30 minutes, or until slightly brown on top. If using a square pan (9 X 9) you will need to bake for an additional 5 to 10 minutes.
Cut into squares and serve.
Yields: 12 to 15 servings
Notes&Tips:
This is a delicious dessert that can be made anytime of the year. Fresh pineapple can also use used to make this dessert. Peel and dice pineapple, place in a blender and process to a chunky consistency and now follow the above recipe.
The crumble for this recipe can be made using just all purpose flour. The finished texture and taste will be a little different but overall you'll have the same outcome. I generally use part flour, oats and nuts (in this case almond flour).
This is one of my favorite desserts to serve a crowd; and I always get rave reviews.
