Potato Gnocchi with Chicken & Mushrooms

Ingredients:
1 pk. (16 ozs.) potato Gnocchi
8 oz. white button mushrooms, sliced 1/4" thick
2 cups cooked chicken
2 medium tomatoes cut into wedges
1 1/2 tbsp olive oil
1 tbsp butter
1 tbsp all purpose flour
3 garlic cloves, minced
1 sprig fresh thyme, chopped
1 sprig fresh oregano, chopped
1/4 tsp white pepper
salt to taste
Bring a large pot of water to boil. Add gnocchi and cook for 4 minutes, until gnocchi floats to the top. Save 1 cup of water that gnocchi has been cooked in before draining.
Heat a large skillet over medium heat. Add olive oil and swirl to coat pan. Add mushrooms to pan and cook for 3 minutes, stirring occasionally. Add butter, garlic and herbs to pan, cook 2 minutes.
Set heat to low, add flour and stir constantly for 2 minutes. Slowly add saved gnocchi water (1/2 to 2/3 cup), stirring. As sauce begins to thicken, add salt to taste and white pepper. Cook for a minute more.
Add gnocchi, chicken and tomatoes to pan. Stir to combine.
Serve.
