Farro Salad

This delicious Farro Salad can be consumed as a vegetarian main dish or as a side dish.

Ingredients:

  • I cup Farro

  • 1 3/4 cup water

  • 1/4 lb green beans

  • 1/4 lb sugar snap peas

  • 1/2 of a small onion finely chopped or grated

  • 1 to 2 garlic cloves minced

  • 2 tbsp olive oil

  • zest of 1 lemon

  • 1 to 2 tbsp freshly squeezed lemon juice

  • salt and pepper to taste

Heat 1 tbsp of oil in saucepan over medium heat. Add half of the onion and cook, stirring, for 2 minutes. Add garlic and cook 30 seconds. Add Farro, salt and pepper and cook for 2 minutes longer, stirring. Add water and bring to boil. Cover with lid, reduce heat to simmer and let cook for 15-20 minutes until water has been absorbed. Remove from heat and let rest 5 minutes before fluffing with a fork. As you fluff, add 1/2 of the lemon zest.


While Farro is cooking, bring a pot of water to boil and add salt. Put peas and beans into boiling water and cook for 3 minutes uncovered. Strain. Use paper towel to pat excess liquid off of vegetables. Add the other tablespoon of olive oil to the pot; saute onion for two minutes. Add remaining garlic and cook 30 seconds. Add vegetables and cook stirring for 1-2 minutes. Remove from heat and add remainder of lemon juice and lemon zest.


Serves 4 to 6.

Notes & Tips:

  • Serve as a vegetarian main dish or a side with your favorite grilled or roasted meat or fish.

  • Vegetables can be substituted for your favorites. Grilled or roasted mini peppers would be great with this Quinoa.
