Roasted Cherry Tomato Bruschetta

Ingredients:
1 1/2 lbs large cherry tomatoes, wash and pat dry
1 1/2 tbsp olive oil
salt to taste
2 to 3 ounces goat cheese (chevre), at room temperature
French bread or baguette
Basil leaves for garnish (green or purple)
Foil wrap
Heat grill on high. Tear 2 pieces of foil wrap about 8 inches. Place tomatoes on one piece of foil, drizzle with olive oil and salt to taste. Grill for 3 to 4 minutes. Place on a large platter and allow foil to cool for a few minutes before opening.
Slice French bread or baguette into desired thickness and lightly toast on grill or toaster oven.
To assemble Bruschetta: spread goat cheese on toasted baguette, place a few basil leaves on cheese and then place two whole cherry tomatoes on top. Serve.


Notes&Tips:
This year my hubby grew some very large cherry tomatoes. These were about 3 times the size of a regular cherry tomato. I have used these in pasta and salad recipes before but wanted to use them in a way that made them truly stand out. So this dish, Roasted Cherry Tomato Bruschetta was born.
When roasting these tomatoes, you don't want them to get soft and mushy. Cook until the skin splits, this will keep them whole.
Since it's summer, I did not want to heat up my kitchen, so I opted to roast it on the grill. These cook up really fast, so keep an eye on the time when making these.
If you're not a fan of goat cheese, you can opt for mozzarella or any of your favorite cheese. The occupants of my home adore goat cheese so that was our first choice.
Serve Roasted Cherry Tomato Bruschetta as a snack, an appetizer or even as a light lunch.
If you noticed in the image, my Basil leaves were not green; that is because these are purple Basil. They are delicious but not as strong tasting as green Basil. And they make for a nice color presentation.
