Roasted Maple Carrots

Ingredients:
2 lbs. carrots, trimmed and scrubbed
2 tbsp olive oil
1 tbsp unsalted butter, cut into pieces
2 tbsp light brown sugar
1/4 cup pure maple syrup
1/4 tsp crushed red pepper flakes
Kosher salt
Preheat oven to 400°F. Line a rimmed baking sheet with 2 to 3 sheets of foil (you’ll need it!). Cut carrots into 3- to 4-inch long sticks or in half lengthwise. If carrots are thin, you could roast them whole, but will need to add a few minutes to baking time.
Spread carrots on foil lined baking sheet. Drizzle olive oil over carrots. Evenly top with butter, brown sugar, maple syrup, and red pepper flakes. Season with kosher salt and toss to combine.
Bake carrots, tossing every 20 minutes, until tender and browned around the edges, 40-50 minutes. Transfer to a platter and serve.
Yields: 4 to 6 servings
Notes&Tips:
These are "to die for" carrots. They will become your favorite to serve everyday, to company or on special occasions!
Is it essential to line the baking sheet with foil? Absolutely! Unless you do not mind the soaking and scrubbing the pan after. Or may be, you'd prefer to toss it? The pan will become very sticky with all the sugar and maple syrup. So, my advise, line it with 2 or 3 sheets of foil as the maple and sugar leaks through.
