Roasted Rosemary Chicken Breast with Mushroom Gravy

Ingredients:
For Roast Chicken
2 large bone-in split chicken breasts with skin on
3 sprigs rosemary
salt and pepper to taste
1 tbsp butter
For Mushroom Gravy
4 oz sliced mushroom
1 1/2 tbsp butter
1 1/2 tbsp flour
1 1/2 cups vegetable broth
2 tsp fresh thyme
salt and pepper to taste
Wash and trim chicken breast of any fat and hanging skin. Pat dry and season with salt and pepper.
Place seasoned breasts in an oiled baking pan or dish. Gently place rosemary under skin of breasts and on the underside. Rub butter on top of breast.
Cook in a pre-heated 375°F oven for 40 to 45 minutes; an instant read thermometer should register 165 in thickest part of breast.
If chicken in not brown enough, broil for 2 minutes. Let chicken breast rest for 10 minutes before carving.
As the chicken cooks, heat butter in a saucepan, add mushrooms and cook on medium high heat for 8 to 10 minutes, stirring occasionally until no liquid remains and mushrooms has browned slightly.
Add flour to mushrooms and stir to incorporate. Cook for 1 minute.
Slowly add vegetable broth to mushroom, stirring occasionally as it comes to a boil. Reduce heat, add thyme and simmer for about 5 minutes or until gravy has reached desired thickness.
Add salt and pepper to taste.
Slice chicken breast, plate and ladle gravy on top. Serve with your favorite side.

Notes&Tips:
This was a simple dish to create and did not require much hands-on. It is perfect for a weekday dinner or when you don't feel like doing too much but still want to enjoy a healthy meal.
I was able to procure some large split breasts, so two of these provided enough meat for 4 people. I chose bone-in breasts as they tend to be a bit juicier than boneless and was therefore perfect for roasting.
If you'd rather boneless breast, do adjust cooking time accordingly.
The Mushroom Gravy was delicious and flavorful and was the perfect accompaniment for the chicken breasts.
Sides that can accompany this chicken include, mashed potatoes, baked potatoes, rice pilaf, steamed broccoli or carrots.
