Savory Turkey-Stuffed Mushrooms

Ingredients:

  • 1 lb. mushrooms

  • 1/2 lb. ground turkey

  • 2 tbsp finely chopped chives

  • 2 tsp chopped thyme

  • 1 garlic cloves, minced

  • 1/3 cup breadcrumbs

  • 1/4 tsp each paprika, chili powder, black pepper, salt

  • 1 tbsp oil

  1. Clean mushrooms and remove the stems. Finely chop the stems and reserve.

  2. Heat oil in a medium-sized skillet. Add oil to pan and swirl to coat. Cook garlic for 1 minute, stirring.

  3. Add turkey, 2/3 cup chopped stems, chives, thyme, paprika, chili powder and black pepper. Cook, stirring, until turkey has been cooked through and all liquid has evaporated.

  4. Stir in salt and breadcrumbs.

  5. Stuff mushrooms with filling and place on a greased baking sheet. Bake in a preheated 400°F oven for 15 to 20 minutes, until the top of filling is a bit browned.

  6. Garnish with chopped parsley and a dash of paprika. Serve.

Yields: About 18 to 20 mushrooms


Notes&Tips:

  • These mushrooms tastes great and would be a hit as an appetizer at any dinner gathering or as a snack. These button-size wonders will disappear in a flash!

  • Using ground turkey instead of ground beef means that this is a low fat appetizer. So eat as much as you'd like!
