Seasoned Fried Chicken

Ingredients:
8 pieces chicken (thighs & drumsticks)
1/2 cup all-purpose flour
1/4 cup plain bread crumbs
1/4 cup corn meal
2 eggs, lightly beaten
1/4 cup water
1 1/2 tsp salt
1 tsp each: onion powder, garlic powder, black pepper
1/2 tsp each: oregano, thyme & rosemary
1/4 tsp cayenne
oil for frying
Mix all seasonings and 1/2 tsp salt together. Toss the chicken with 1/2 of the seasoning mixture.
Refrigerate for 2 hours or overnight to allow seasonings to soak into the chicken.
Heat oil to 350°F in a deep pan or fryer.
Combine flour, bread crumbs, cornmeal and the remaining seasonings and salt in a shallow bowl.
Whisk water and beater eggs together.
Dip chicken in egg mixture, then coat with flour mixture.
Fry in hot oil until golden brown; about 7-8 minutes per side.
Drain on paper towel.
Yield: 8 pieces
Notes&Tips:
I am not a big fan of fried foods, but I do enjoy the occasional fried chicken.
The coating for the fried chicken in not thick and that is how I like it. When I bite into a piece of fried chicken, I don't like having to bite into a thick layer before getting to the chicken.
If you like a spicier fried chicken, by all means add some hot sauce to the egg mixture or even to the chicken pieces when seasoning.
I served these with baked potato and a salad for a simple and delicious dinner.
