Crispy on the outside, juicy on the inside!

Ingredients:

  • 8 pieces chicken (thighs & drumsticks)

  • 1/2 cup all-purpose flour

  • 1/4 cup plain bread crumbs

  • 1/4 cup corn meal

  • 2 eggs, lightly beaten

  • 1/4 cup water

  • 1 1/2 tsp salt

  • 1 tsp each: onion powder, garlic powder, black pepper

  • 1/2 tsp each: oregano, thyme & rosemary

  • 1/4 tsp cayenne

  • oil for frying

  1. Mix all seasonings and 1/2 tsp salt together. Toss the chicken with 1/2 of the seasoning mixture.

  2. Refrigerate for 2 hours or overnight to allow seasonings to soak into the chicken.

  3. Heat oil to 350°F in a deep pan or fryer.

  4. Combine flour, bread crumbs, cornmeal and the remaining seasonings and salt in a shallow bowl.

  5. Whisk water and beater eggs together.

  6. Dip chicken in egg mixture, then coat with flour mixture.

  7. Fry in hot oil until golden brown; about 7-8 minutes per side.

  8. Drain on paper towel.

Yield: 8 pieces

Notes&Tips:

  • I am not a big fan of fried foods, but I do enjoy the occasional fried chicken.

  • The coating for the fried chicken in not thick and that is how I like it. When I bite into a piece of fried chicken, I don't like having to bite into a thick layer before getting to the chicken.

  • If you like a spicier fried chicken, by all means add some hot sauce to the egg mixture or even to the chicken pieces when seasoning.

  • I served these with baked potato and a salad for a simple and delicious dinner.
