Sesame Teriyaki Salmon

Ingredients:
1 lb. salmon fillet cut into 4 equal portions
2 tbsp sesame teriyaki dry rub*
2 tbsp lemon juice
cooking spray
Preheat oven to 375°F .
Spray baking pan with cooking spray.
Sprinkle lemon juice over salmon. Gently pat sesame teriyaki dry rub onto both sides of salmon.
Bake for 18 minutes, or until fish flakes easily when tested with a fork.
Serves 4.

Notes&Tips:
I love making fish dishes. They are so simple and always delicious. Salmon happens to be one of my favorite fish. The flavor of the fish itself requires no enhancement; just flavoring with salt and pepper works well.
This is my first time using a teriyaki dry rub. However, if you want a real teriyaki taste, use teriyaki sauce or marinade. I must say, thought, that this rub is really flavorful even if it lacks the strong teriyaki taste. My family did enjoy this rub on the salmon.
* I used Victoria Taylor's brand Sesame Teriyaki Seasoning which can be procured at www.vgourmet.com
Here's a homemade teriyaki sauce: 1/4 c. soy sauce, 3 tbsp brown sugar, 1 minced garlic clove, 1 tsp grated ginger, 1/2 c. water, 1 tbsp cornstarch and 1 tbsp water. Whisk 1 tbsp water and cornstarch in a small bowl until dissolved. Stir all remaining ingredients together in a small sauce pan over medium heat. Keep whisking as sauce comes to a boil. Pour in cornstarch mixture. Reduce heat and simmer until sauce thickens and has a shiny look.
