Simple Salsa

Ingredients:

  • 1 1/2 lbs Roma tomatoes

  • 1/2 red or yellow onion, chopped

  • 1 garlic clove, minced

  • 1/3 cup cilantro

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/4 to 1/2 tsp red pepper flakes

  • 1 1/2 tbsp lemon juice

  • a pinch of cayenne

  1. Core and coarsely chop tomatoes. Add to the bowl of a food processor.

  2. Add all other ingredients to food processor. Pulse for about 8 to 10 seconds.

  3. Taste and add more seasonings if necessary.

  4. Transfer to a bowl, cover and refrigerate for about 30 minutes to allow flavors to meld.

  5. Serve with your favorite tortilla chips.

Makes about 3 cups.


Notes&Tips:

  • This is a quick and easy salsa that you can whip up for a snack or appetizer.

  • I did not make this a spicy salsa but you can surely add more pepper flakes, more cayenne pepper, or even chopped jalapeno if you'd like some heat.

  • If you are averse to cilantro, substitute for parsley.

  • If you're out of Roma tomatoes, use canned tomatoes as a substitute, but be sure to drain before using as you don't want a watery salsa!
