Simple Salsa

Ingredients:
1 1/2 lbs Roma tomatoes
1/2 red or yellow onion, chopped
1 garlic clove, minced
1/3 cup cilantro
1 tsp salt
1/2 tsp black pepper
1/4 to 1/2 tsp red pepper flakes
1 1/2 tbsp lemon juice
a pinch of cayenne
Core and coarsely chop tomatoes. Add to the bowl of a food processor.
Add all other ingredients to food processor. Pulse for about 8 to 10 seconds.
Taste and add more seasonings if necessary.
Transfer to a bowl, cover and refrigerate for about 30 minutes to allow flavors to meld.
Serve with your favorite tortilla chips.
Makes about 3 cups.
Notes&Tips:
This is a quick and easy salsa that you can whip up for a snack or appetizer.
I did not make this a spicy salsa but you can surely add more pepper flakes, more cayenne pepper, or even chopped jalapeno if you'd like some heat.
If you are averse to cilantro, substitute for parsley.
If you're out of Roma tomatoes, use canned tomatoes as a substitute, but be sure to drain before using as you don't want a watery salsa!
