Smashed Potatoes

Ingredients:
10 medium-sized Yukon Gold potatoes, about 2 pounds
6 tbsp unsalted butter
3 garlic cloves, minced
2 tsp chopped dill
1/8 tsp red pepper flakes
salt to taste
Scrub potatoes and place in a large pot. Add enough water to cover the potatoes by one inch; add a generous amount of salt. Bring to boil, reduce heat to a low boil and let cook for 15 to 18 minutes, or until potatoes are easily pierced with a paring knife or fork. Drain potatoes.
In the same pot, melt butter, add garlic, dill and pepper flakes. Cook, stirring, for 30 seconds. Remove from heat. Add potatoes to the melted butter, stirring to coat potatoes. Using the back of a spoon, press gently into the potatoes to break them up, (being careful not to smash them too much or they will become mashed potatoes). Taste and add additional salt, if desire.
Serve warm.
Yields: 4 to 6 servings
Notes&Tips:

This is a delicious alternative to mash potatoes. I'm generally not a big fan of mashed potatoes so this alternative Smashed Potatoes is a wonderful substitute.
