Ingredients:
8 drumsticks
1 small hot pepper, finely chopped or hot sauce
3 tbsp finely chopped mixed herbs (oregano, rosemary, thyme)
1/2 tsp each garlic powder, onion powder, smoked paprika, ground mustard, salt
1/4 tsp pepper
1/2 cup BBQ Sauce
1/4 tsp hot pepper sauce or your choice of hot pepper (finely chopped)
Wash and trim chicken of any excess fat and skin. Pat dry.
In a small bowl, combine chopped pepper (or pepper sauce), chopped herbs, garlic powder, onion powder, paprika, mustard, salt and pepper. Rub chicken pieces with seasoning mix. Cover and refrigerate for 2 hours or overnight.
Heat gas grill on high. In a small bowl, combine BBQ sauce and hot pepper sauce.
Oil grill grates to prevent meat from sticking to grill. Place chicken pieces on grill, reduce heat to medium-low heat, cook for 20 minutes, turning every 5 minutes. After each turn, brush with BBQ Sauce. Chicken in done when internal temperature reaches 165°F.
Serve hot with your favorite side.
Serves: 4
Notes&Tips:
Grilling is my favorite way to cook in the summer. It's also easy cooking.
I used wiri-wiri pepper for my hot pepper. You will not find this in most supermarkets or specialty stores except maybe a Caribbean specialty store. Use your favorite hot pepper and as much as you can take.
Pick and choose the herbs you'd like to incorporate into this recipe. I've used my favorites.
I served these Spicy Herbed BBQ Chicken Drumstick with Garlic-Sage Mashed Potatoes.
