Spinach Spaghetti with Smoked Salmon

Spinach Spaghetti with Smoked Salmon

Ingredients:

  • 1/2 lb whole wheat spinach spaghetti noodles

  • 1/3 cup grated Parmesan cheese

  • 1 1/2 cups broccoli and cauliflower florets

  • 1/2 lb smoked salmon

  • 4 garlic cloves, minced

  • 1 1/2 tbsp olive oil

  • salt and pepper to taste

  1. Bring a large pot of salted water to boil. Cook noodles according to package directions.

  2. Three minutes before noodles are done, add broccoli and cauliflower florets.

  3. Save 1 cup of pasta water before draining.

  4. Heat oil in a skillet, saute garlic for 30 seconds.

  5. Add pasta, vegetables and cheese along with some of the reserved pasta water (1/4 cup) and pepper. Toss gently.

  6. Keep adding more pasta water (slowly) until you have the desired amount of sauce.

  7. Gently fold in salmon. Garnish with more Parmesan and some red pepper flakes, if desired.

Serves 4.


Notes & Tips:

  • This dish is perfect as a week night recipe or when you're not up to the task of putting in a lot of time in the kitchen.

  • I like to use Hodgson Mill Whole Wheat Spinach Spaghetti. You won't even know you're eating whole wheat pasta!

  • Serve with a salad and bread sticks to round out the meal.
