Strawberry-Coconut Smoothie

Strawberry-Coconut Smoothie

Ingredients:

  • 1 cup unsweetened coconut milk

  • 3 cups sliced strawberries

  • 1 to 2 tbsp maple syrup

  • 2 cups ice

  1. Remove 4 slices of strawberries for garnish. Place the rest of the strawberries along with all other ingredients in a blender and process until smooth.

  2. Take reserved strawberry slices and make a small slit in each so they can be placed on the rim of 4 glasses.

  3. Pour smoothie into the 4 glasses and serve immediately.

Yields: 4 servings


Notes&Tips:

  • If you don't have coconut milk, you can substitute for coconut cream. However, you will only use half to two-thirds cup of the cream and substitute the other half or one-third for water. This is because the coconut cream is much thicker than the milk.

  • This smoothie could also be made with half cup coconut milk and half cup unsweetened coconut water.

  • Strawberry-Coconut Smoothie is a refreshing beverage for hot summer days when you want to beat the heat.
