Sweet Potato Ginger Rosemary Soup

Ingredients:
2 lbs sweet potato, peeled and cut into large chunks
1 small shallot, chopped (about 1/3 cup)
1 tbsp chopped fresh ginger
3 cloves garlic, chopped
1 sprig fresh rosemary, chopped (about 1 tbsp)
2 tbsp olive oil
5 1/2 cups chicken/vegetable broth
salt and pepper to taste
chives, green onion or parsley for garnish, optional
Heat a large soup pot on medium heat. Add oil and swirl to coat pan. Saute shallot for 3 minutes in oil; add garlic, ginger and rosemary, cook for an additional 2 minutes. Add sweet potato and cook 5 minutes, stirring occasionally.
Pour 5 cups broth into pan and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are very tender.
Using an immersion blender, puree soup until no chunks remain. If soup is too thick, add remaining broth a little at a time until desired consistency is achieved.
Add salt and pepper to taste.
Garnish with your choice of herbs and serve with Toasted Garlic Rosemary bread.

Notes&Tips:
I love one pot cooking and I love making soup. I can never help myself when I decide to make soup, no soup is ever made the exact same in my kitchen. I always find something different to do with it. There are so many variations of the same soup that one can make and consume that it would be a shame to cook the same thing over and over again in the exact manner.
This Sweet Potato Ginger Rosemary Soup will leave you asking for more. It is simply delicious with its smooth gingery kick. It sends your palate on holiday to some place you have never heard of and do not wish to come back from. I challenge you to try this soup.
I used garnet sweet potatoes, but any of your favorite type of sweet potato will do just as well. The soup will taste just as decadent and out of this world. The ginger/rosemary combination worked like a magical spell for this soup.
Might I add that this soup is super easy to make? Serve it for lunch or dinner or even a weekend morning brunch and everyone will thank you.
