Swiss Chard Salad with Peach Dressing

Ingredients:

For the Salad:

  • 10 cups young swiss chard, rinsed and chopped

  • 1/4 cup toasted pecans

  • 1/4 cup dried cranberries

  • 2 peaches, peeled and diced


For the Dressing

  • 1 ripe peach

  • 4 to 6 basil leaves

  • 2 tbsp olive oil

  • 2 tbsp apple cider vinegar

  • 1 to 2 tsp honey

  • salt and pepper to taste

  1. In a small container, combine the olive oil, apple cider vinegar and honey. Set aside.

  2. Wash, peel, and slice the peace. Place in a blender along with the basil leaves and blend until smooth.

  3. Add peach pulp to the container with the vinaigrette and stir to combine. Season with salt and pepper. Cover and refrigerate until ready to use.

  4. Place the chopped swiss chard onto a large serving platter or bowl. Add the diced peaches, toasted pecans and cranberries.

  5. Serve with the Peach Dressing on the side.

Yields: 4 to 6 servings
