Swiss Chard Vegetarian Cobb Salad

Ingredients:

For the Salad:

  • 6 cups chopped baby Swiss chard

  • 2 boiled egg, preferably medium boil

  • 2 avocados, sliced

  • 1 large tomato, cut into wedges

  • 1/2 bell pepper, thinly sliced

  • 1/2 English cucumber, thinly sliced and cut into half

  • 1 stalk celery, chopped

  • 2 tbsp thinly sliced red onion

  • 1/3 cup cooked black beans

For Honey-Mustard Dressing:

  • 3 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp honey

  • a toss of red pepper flakes

  • salt and pepper to taste

    1. On a large platter or bowl, place Swiss chard. Arrange the vegetables and beans in piles on the chard. Cut the eggs into halves and arrange on or around vegetables.

    2. Place the first 4 ingredients for the dressing in a small bowl and whisk to combine. Season with salt and pepper to taste.

    3. Serve salad with dressing on the side.

Serves: 4


Notes&Tips:

  • I have Rainbow Swiss chard growing in my garden and picked the small leaves when I want to put it in salads; I therefore use the stems in the salad as they are young and tasty. If you are buying the fully grown Rainbow or regular Swiss chard, use only the leaves and not the stems as they will be too tough to eat raw.

  • This Swiss Chard Vegetarian Cobb Salad works well for a main dish as it has vegetables, protein and healthy fats. I served this up for lunch and it was very filling.

  • You can mix and match the vegetables you put into the salad. Use what you have on hand. The original Cobb Salad was created using left overs in the fridge in the middle of the night. It was created at Brown Derby Restaurant in Hollywood in 1937. Although this recipe does not include all the ingredients in the original 1937 salad, it is very tasty, nutritious and colorful. It is easy on the eyes and good for the body!

  • I served a Honey-Mustard Dressing with this Swiss Chard Vegetarian Cobb Salad but you can serve it with a French Dressing also. I always serve dressing on the side as I have members of my family who do not use dressings on their salads. Feel free to drizzle dressing over the salad before serving if everyone uses dressing.
