Teriyaki Chicken Burger with Caramelized Onions

Ingredients:
4 Hamburger buns
1 jumbo sweet onion (1 lb.)
1 tbsp Olive Oil
Salt
2 chicken breasts
1/3 cup teriyaki marinade + more for basting
Mayonnaise, optional
Sliced Tomato and lettuce for serving
Homemade potato chips for serving
Wash and trim chicken breasts. Place chicken breasts between a large piece of plastic wrap and fold over. Using s meat mallet, gently pound chicken to acquire an even thickness. Cut each breast into two pieces for a total of 4 pieces.
Place chicken in a plastic zipper bag and pour marinade over. Place in refrigerator and let marinate for two hours. Turning a few times to ensure even marinating.
Sliced onion into quarter inch thickness. Heat oil in a large pan and cook onion on medium heat for five minutes. Stirring occasionally. Lower heat, add salt and continue cooking for about 10 minutes, until onion has a light brown color. Stir occasionally. Add a bit of water, 1 tbsp, to help scrape up caramelized bits from pain. Set aside.
Heat grill on high; oil grill grates and cook chicken breasts for 4 to 5 minutes per side, depending on thickness of the breasts. Breast should reach an internal temperature of 165°F when tested with a thermometer. Baste with additional marinade.
Toast buns if desired. Spread mayonnaise on buns, place one piece of breast on the bottom of each bun. Add some of the Caramelized onion on top of breast. Top with lettuce and tomato and serve with homemade potato chips.

Notes&Tips:
Caramelized onion decreases in amount as it's cooked down. If you like a lot on your burger, cook more. Also you need a very large pan to cook the onions as they require much room to do their thing!
This is a simple and light dinner. By all means add a side salad or some more veggies.
Of course, the caramelized onion is the star of this dish. I used Vidalia onions and their natural sweetness made these even more delectable. I could have eaten this as a caramelized onion sandwich, i.e. without the chicken.
I had to trim my chicken breast as they were too big for my bun and no one wanted their chicken to be bigger than the bun!
I served these burgers with some homemade potato chips along with lettuce and tomato. My kids do not like lettuce and tomato served on their burgers, they have always liked it on the side - go figure!
