Triple Berry Clafoutis

Ingredients:
3 cups mixed berries
1 tbsp cornstarch
1 tsp grated lemon zest
1 tbsp lemon juice
1 cup whole milk
1/3 cup sugar + 2 tbsp
1/2 cup flour
1/8 tsp salt
3 eggs
1 tsp vanilla extract or vanilla beans
powdered sugar
Grease a heat proof glass pie dish.
Wash berries and place in a medium sized bowl.
Gently fold in cornstarch, lemon zest, lemon juice and 2 tablespoons sugar with berries.
In a blender, blend milk, 1/3 cup sugar, flour, salt, eggs and vanilla.
Pour a small amount of batter to cover the bottom of pie dish (about a quarter inch).
Place pie dish with batter on low heat on stove top and cook for one to two minutes to set the batter. Remove from heat.
Add berries to pie dish; and pour remaining batter on top of berries.
Bake in a preheated 350°F oven for 50 to 55 minutes. Top should be puffed and brown and toothpick inserted in center should come out clean.
Sprinkle with powdered sugar just before serving. This dish should be served slightly warm. As Clafoutis cools, it will sink.

Notes&Tips:
Clafoutis can be made using any seasonal fruit. It has French origin and is traditionally made with black cherries and consists of a batter that is flan-like.
This dessert is not too sweet, which is how I like it. It is also simple and for me desserts must be simple and quick.
The mix of berries I used were blackberries, blueberries and strawberries. The big strawberries I cut into quarters and the smaller ones into halves.
This is a wonderful way to incorporate more fruits into your diet; especially if one doesn't like eating fruit in the raw.
