Fish with Herbed Dumplings

Ingredients:
For Dumplings:
2 1/2 cups all purpose flour
2 tsp baking powder
1 tbsp sugar
1/4 tsp salt
4 tbsp butter or margarine
1 tbsp finely chopped parsley
lukewarm water - about 3/4 to 1 cup
For Fish:
1 1/2 lbs cod or other white fish
2 tomatoes diced or 1/2 can diced tomatoes
1 small onion, chopped
1 tbsp chopped parsley
1 tbsp oil
salt and pepper to taste
lemon/lime juice
In a medium sized bowl, combine flour, baking powder, sugar, salt and chopped parsley. With your fingers, fork or pastry blender, work 1 tablespoon butter/margarine into flour mixer until thoroughly incorporated. Add water, a little at a time, and incorporate into flour mix until a cohesive dough forms. The dough should not be dry nor too wet. Its consistency should be such that it can be kneaded. Knead dough for a few minutes forming into a ball. Cover dough and let sit for 10 to 15 minutes.
Cut fish into 1 to 1 1/2 inch pieces.
Heat oil in a skillet on medium heat. Saute onions until soft, about 4 to 5 minutes. Add diced tomatoes and fish. Cook for about 5 to 7 minutes until fish is cooked through.
Add parsley, salt and pepper. Remove from heat.
Heat a large pot half filled with water, add some salt to water and bring to a boil.
As water is heating, divide dough into 12 equal portions. Roll each portion into a cylinder about 3 to 4 inches long. Keep dough covered as you work with each piece.
Once water has reached boiling, add as many dumplings as can fit into the pot without overcrowding. You may need to do this in 2 batches. Dumplings will rise to the surface. Let cook for 5 to 6 minutes. Remove from pot and place on plate.
Heat the remaining 3 tablespoons butter, do not brown the butter, but heat until melted. Cook dumplings in the butter, turning to get it a light brown on all sides.
Transfer fish to a large platter. Drizzle lemon juice on fish. Place browned dumplings on top of fish, sprinkle with some chopped parsley and serve.
Serves: 4 to 6
Notes&Tips:
These dumplings are one of my favorites, and pairing it with fish makes for a very delicious and healthy combination.
My mother used to make these dumplings. Her recipe was not exactly like mine. She had a few different dishes that she would make for us with these dumplings. Of course, the dumplings were always the star of the dish, and we always wanted "more dumplings".
These Herbed Dumplings are fluffy and tender; they have a melt in your mouth feel once they touch your tongue.
