Wedged Salad with Chive Pesto Mustard Dressing

A simple salad for lunch or snack or as a side

Ingredients:

  • 3 mini Artisan lettuce, washed, dried and halved

  • 1/2 small onion, thinly sliced

  • 1/3 cup sliced sweet pepper (color of your choice)

  • 1/4 cup quartered black olives

  • 4 whole sun-dried tomatoes, reconstituted and julienne

For Dressing:

  • 3 tbsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp chive pesto*

  • 1/8 tsp red pepper flakes

  • salt and pepper to taste

  1. In a small bowl, whisk all ingredients for the dressing. Set aside.

  2. Place halved lettuce on a platter or individual plates.

  3. Sprinkle lettuce halves with onion, pepper, olives and sun-dried tomatoes.

  4. Drizzle with dressing and serve.

Serves: 2


Notes&Tips:

  • *Chive Pesto recipe has been posted on this site.

  • I came across these Artisan mini lettuce in my grocery store several months ago, now they are my favorite to serve. Almost no cutting/tearing is required as I generally serve the leaves whole with toppings and dressing on the side.

  • Use this Artisan lettuce as your blank canvas. Pair with your favorite fruits and/or vegetables.
