Wedged Salad with Chive Pesto Mustard Dressing

Ingredients:
3 mini Artisan lettuce, washed, dried and halved
1/2 small onion, thinly sliced
1/3 cup sliced sweet pepper (color of your choice)
1/4 cup quartered black olives
4 whole sun-dried tomatoes, reconstituted and julienne
For Dressing:
3 tbsp olive oil
1 tbsp Dijon mustard
1 tbsp chive pesto*
1/8 tsp red pepper flakes
salt and pepper to taste
In a small bowl, whisk all ingredients for the dressing. Set aside.
Place halved lettuce on a platter or individual plates.
Sprinkle lettuce halves with onion, pepper, olives and sun-dried tomatoes.
Drizzle with dressing and serve.

I came across these Artisan mini lettuce in my grocery store several months ago, now they are my favorite to serve. Almost no cutting/tearing is required as I generally serve the leaves whole with toppings and dressing on the side.
Use this Artisan lettuce as your blank canvas. Pair with your favorite fruits and/or vegetables.
