Whole Wheat Pumpkin Pancake

Ingredients:
1 1/2 cups whole wheat flour
1 tbsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 cup milk
1/2 cup pumpkin puree
2 egg, beaten
1 tsp vanilla extract
3 tbsp maple syrup or brown sugar
2 tbsp melted butter
maple syrup, honey, butter for serving
In a 4-cup measuring cup, combine milk, pumpkin puree, beaten egg, vanilla extract, 3 tablespoon maple syrup and melted butter. Whisk until all ingredients are combined and no lumps are visible.
In a medium sized bowl, combine flour, baking powder, cinnamon, nutmeg and salt.
Slowly add milk mixture to flour mixture; whisk until thoroughly combined.
Heat a large skillet on medium heat. Brush hot skillet with oil or butter. If using a non-stick skillet you can skip brushing with oil/butter.
Pour 1/3 cup batter on hot skillet and cook 3 minutes, flip and cook 2 minutes more.
Serve with maple syrup, honey and/or butter.
Yields: 12 pancakes
Notes&Tips:
The first time I was introduced to Pumpkin Pancakes was when my younger daughter was in 3rd Grade. To celebrate Halloween, her teacher has the homeroom moms make these pancakes for the children. I was one of those parents and I will admit that I turned up my noise on these pancakes even before I tried it. In fact, I did eat any pancake that I helped to cook that day. My daughter's teacher sent home the recipe with the children so that they could enjoy it at home. When my daughter brought home the recipe that afternoon and told me she really enjoyed the pancakes and could I make it on the weekend. So I went ahead and made Pumpkin Pancakes for my family's Saturday morning breakfast. Everyone enjoyed the pancakes, including myself! I was pleasantly surprised!
This is a different version of Pumpkin Pancakes, using whole wheat instead of white flour for a healthier version.
These Whole Wheat Pumpkin Pancakes work very well with maple syrup. My daughter spread cream cheese on hers and she enjoyed it that way. My husband used honey and found that satisfying. So take your pick as to what you'd like to put on yours.
