Baked Eggs & Potato

Ingredients:

  • 2 cups frozen Ore-Ida potatoes

  • 3 tbsp butter/margarine

  • 6 eggs

  • 2 tbsp milk

  • 1/3 cup shredded pepper jack cheese

  • 1/4 cup shredded Parmesan

  • 1/4 tsp each: salt and pepper

  • 1 tsp chopped oregano, optional

  • 2 tbsp chives, cut into 1" pieces (or smaller if you wish), optional

  1. Melt butter/margarine in a microwave safe dish.

  2. Add potatoes and cook on high 5 to 7 minutes.

  3. In a large bowl, whisk eggs until fluffy.

  4. Add the rest of the ingredients and whisk to combine.

  5. Pour over the potatoes and bake in a preheated 350°F oven for 20 minutes, or until eggs are set.

  6. Sprinkle with additional cheese if desire.

Serves: 4 to 6


Notes&Tips:

  • Eating a good breakfast sets the tone for the day. So it is always wise to have a healthy and filling breakfast so one can avoid unhealthy snacking.

  • This egg dish has both protein and healthy carbs to start your day off right.

  • When my children were toddlers and preschoolers, I made this often for our weekly playgroup with other moms and kids and it was always a hit.

  • Diced fresh potatoes can be used instead of Ore Ida. Boil in salted water until fork tender. If you go this route, mix in some diced onions and bell peppers. Remember to grease baking dish before adding the cooked potatoes and egg mixture.

  • Sometimes I've added turkey or beef sausage and additional vegetables like broccoli, spinach or asparagus.

  • The Pepper Jack and Parmesan cheese can be substituted for cheddar or even goat cheese. Goat cheese makes this dish creamy, but reduce the salt if you use Goat cheese as it tends to be on the salty side.

  • This is a great dish for a brunch or a special occasion breakfast. There are many ways to make it your own so don't be afraid to experiment.
