Baked Spicy Meatballs

Spicy Meatball with Homemade Marinara Sauce

Ingredients:

  • 1 lb lean ground beef

  • 2 eggs, beaten

  • 1/4 cup chopped cilantro

  • 1/2 cup finely chopped onion

  • 1/2 cup breadcrumbs

  • 1 tsp chili powder

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1/2 tsp red pepper flakes

  • 1/2 tsp salt

  • 1 tsp cumin

  • 2 tbsp Chipotle in adobo sauce

  1. Preheat oven to 400 °F . Grease a baking sheet.

  2. In a large bowl place beef, onion, spices, herb, eggs and breadcrumbs. Using a fork, incorporate into the beef. Do not over mix.

  3. Shape into 1" rounds. Place on greased baking sheet.

  4. Bake for 18-20 minutes.

Notes & Tips:

  • I love making meatballs. I always make a double batch and freeze half to be used later when my daughter requests spaghetti and meatballs one hour before dinner!

  • This meatball recipe was especially made for the Superbowl, hence it being spicy.

  • I have never fried my meatballs. The idea of all that oil soaking into the ground beef turns me off.
