Baked Spicy Meatballs

Ingredients:
1 lb lean ground beef
2 eggs, beaten
1/4 cup chopped cilantro
1/2 cup finely chopped onion
1/2 cup breadcrumbs
1 tsp chili powder
1 tsp black pepper
1 tsp paprika
1/2 tsp red pepper flakes
1/2 tsp salt
1 tsp cumin
2 tbsp Chipotle in adobo sauce
Preheat oven to 400 °F . Grease a baking sheet.
In a large bowl place beef, onion, spices, herb, eggs and breadcrumbs. Using a fork, incorporate into the beef. Do not over mix.
Shape into 1" rounds. Place on greased baking sheet.
Bake for 18-20 minutes.
Notes & Tips:
I love making meatballs. I always make a double batch and freeze half to be used later when my daughter requests spaghetti and meatballs one hour before dinner!
This meatball recipe was especially made for the Superbowl, hence it being spicy.
I have never fried my meatballs. The idea of all that oil soaking into the ground beef turns me off.
